WHAT IS MADE IN THE KITCHEN AT EUREKA CITY SCHOOLS…
IS TAKEN VERY SERIOUSLY
“we provide about 35-hundred meals a day.. and all of those meals are scratch kitchen cooked.”
FOOD SERVICE MANAGER LORI CULBER SAYS ABOUT TWO YEARS AGO THE CITY OF EUREKA FORMED A STRICT NUTRITIONAL POLICY WITH SODIUM, FAT AND FIBER REQUIREMENTS… THEY STARTED THIS ABOUT A YEAR BEFORE THE FIRST LADIES INITIATIVE AND THEY ARE EVEN AHEAD OF THE STATE…
”for instance the fat requirement standard in California is 35-percent, we are at 30-percent or lower”
SHE SAYS THEY DO THIS THROUGH ATTRACTIVE OPTIONS ON SCHOOL CAMPUSES LIKE REDUCED FAT PIZZA AND SALAD BARS LOADED WITH FRUITS AND VEGETABLES.
“you need to keep their interest and as they get older they want more, and that way if you have better choices and better variety, your going to keep them eating verse leaving campus and going somewhere else.”
Stand up: “but the school is going beyond the salad bar to give students a healthier option.”
SOON THE PROGRAM WILL USE MOSTLY WHOLE WHEAT PRODUCTS LIKE MULTI-GRAIN PASTA AND CHANGE WHAT THEY COOK WITH.
“We use all canola oils and we will change to olive oil. we are tying to get as healthy as possible with all products we use.”
