Pineapple Express begins renovation on brick and mortar location

Pineapple Express, the Hawaiian food truck local to Humboldt County, is opening a fixed location on Myrtle Avenue in Eureka. The building, previously home to Humboldt Soup Company, is in the midst of being painted bright blue. The owner, Codi Nishimoto, told us they’re redoing the inside to give it a modern Hawaii feel—with special touches.

“There’s going to be a swing in the corner with a neon light, kind of like an Instagrammable picture taking place,” Nishimoto said. “We will eventually be utilizing the drive-thru. In the beginning, not so much just because everything is going to be kind of hectic and we’re going to have an expanded menu from what the truck is.”

They’re planning a grand opening next month.
