Slice of Humboldt Pie sets goals to expand beyond Humboldt & celebrates 10 years

Slice of Humboldt Pie celebrated 10 years of business in July and recently secured a larger production kitchen at Redwood Acres with hopes to expand their pie company.

“Ten years later, we’re still in business, thankfully, and we just secured a larger production kitchen at Redwood Acres, again,” said Kristen Thompson, co-owner of Slice of Humboldt Pie. “And hopes to push our wholesale maybe a little further outside of Humboldt County.”


Kristen’s wife, Amber, has been using her great-grandmother’s pie crust recipe for years. Making pies runs in Amber’s blood. The couple’s original business plan was to make ten pies a day which quickly turned to 120. Now, with their new kitchen, they will be able to make about 800 pies in an hour.

“We thought we were being crazy that we could never sell ten pies a day,” Thompson said. “And to see it now– expanding is great and all that but like it’s really in the human aspect, the community.”

The dream for the Slice of Humboldt Pie is to sell beyond Humboldt County. Holiday orders start October 1.

“If we could put a little slice of Humboldt Pie in all our vacation spots, that would be great and just thank you for, you know, everything the community has done for us,” Thompson said.
